FERMENTATION ACTIVATING AGENT
COMPOSITION
Di-ammonium phosphate (80%), cellulose (19,85%), thiamin
(0,15%).
GENERAL FEATURES
Appearance: white powder
NUTRIFERM START is a new biological fermentation energiser,
based on a modern concept, designed to promote a quick start of
alcoholic fermentation.
NUTRIFERM START contains ammonia salts and thiamine,
essential nutrients for the yeast in the first phase of fermentation,
and cellulose.

APPLICATIONS
The use of Nutriferm START provides the perfect environment in
fermentation for the cellular development of selected yeasts, so
that the initial propagation and subsequent fermentation takes
place regularly. NUTRIFERM START in fact enriches the must with
all the elements and nutrients necessary to promote the yeast
metabolism and the quickest start of fermentation process. Its use
enables each yeast strain to display the physiological features for
which it was chosen and prevents from the biosynthesis of un-
required compounds.
The cellulose contained acts as yeast support and plays a
detoxicant role, since it removes medium chain fatty acids (C8,
C10) and their esters. This feature is particularly useful to solve
sluggish or incomplete fermentation, leading often to stuck
fermentation.
NUTRIFERM START doesn't modify primary grape aromas, and its
particular composition limits the production of substances causing
reduction off-flavours.
DOSAGE
20Ô30 g/hL in the fermentation stage.
35Ô37 g/hL as a remedy for stuck fermentation
(legal limit in the EU: 37,5 g/hL)
INSTRUCTIONS FOR USE
Dissolve NUTRIFERM START in a small amount of water. Add to
the must before the start of fermentation, and blend in thoroughly.
For stuck fermentation, add carefully the product during a pumping
over.
PACKAGING AND STORAGE
1 kg bag

Sealed package: keep the product in a fresh, dry, well-ventilated
area.
Opened package: carefully reseal the package and keep it as above
indicated.
Product approved for winemaking, in accordance with: CE 1493/99.
